Description
Zoë vinegar is a perfect blend of grape must and red wine vinegar aged for different periods of time. When mixed together, they create a sweet and tangy balsamic vinegar mixture. The product is made from the juice of freshly picked white grapes (typically Trebbiano grapes) which are then fermented with a slow aging process that concentrates the flavors. The flavor intensifies over the years as the vinegar is stored in wooden barrels. It then becomes soft, viscous and very concentrated. The difference between white and dark balsamic vinegar is that it uses a small amount of white wine vinegar in the process, unlike dark vinegar which uses a small amount of red wine vinegar.
Both are excellent on their own or combined with our extra virgin olive oil.
