Donuts with wild blueberries from Lac-Saint-Jean and honey, a real delight!

This little sweet dessert was created and cooked by La cuisine à JO who chose two of our products to prepare old-fashioned donuts for us.

What can we say about the result? They are simply delicious, soft with a delicate taste of wild blueberries. This is the donut to discover!

Preparation time: 30 minutes
Resting time: approximately 1 hour
Cooking time: 2-3 minutes
Yields: about 12 donuts

Part One: Donuts

Ingredients

  • 1/2 cup hot water
  • 2 1/2 tsp instant yeast
  • 1/4 cup sugar
  • 3/4 cup hot milk
  • 2 eggs, lightly beaten
  • 1/2 cup melted butter
  • 1/2 tsp salt
  • 1/2 cup dried and rehydrated wild blueberries
  • 4 cups all-purpose flour
  • Canola oil (for cooking)

Preparation

  1. Rehydrate the blueberries by pouring boiling water over them, let them soak for at least 10 minutes. Drain.
  2. In a large bowl, add warm water, yeast and 1 tsp sugar. Let sit for 5-10 minutes.
  3. Add remaining sugar, butter, milk, eggs, blueberries and salt and mix.
  4. Gradually add the flour, stirring constantly with a spatula, until the dough forms a ball.
  5. Place the ball of dough on a floured work surface and knead until the dough is smooth.
  6. Place the dough ball in a large bowl and cover with a clean cloth. Let the dough rise until doubled in volume. About 1 hour.
  7. When the dough has risen, turn it out onto a floured work surface and roll it out to about 1/4 inch thickness.
  8. Using a cookie cutter, cut out donut portions and place on parchment paper on a baking sheet.
  9. Heat the fryer to 375F, then cook the donuts for about two minutes on each side or until nicely browned.
  10. Place on a cooling rack.

Part Two: Honey Glaze

Ingredients

  • 2 1/2 cups powdered sugar.
  • 1/4 cup wild blueberry honey .
  • 3 tbsp water (I used the water I used to hydrate the blueberries, it gives a slight purple color).

Preparation

  1. Add all ingredients to a saucepan, place over medium heat and mix until smooth. Note that the mixture must always remain warm, as it hardens quickly.
  2. Dip the donuts and place on a cooling rack.


You can also simply roll the donuts in powdered sugar or enjoy them plain.
