Dried Wild Blueberry Cookies

Ingredients
- 1/2 cup softened butter
- 3/4 cup brown sugar
- 1 egg
- 1 C. vanilla extract
- 1/2 cup unbleached flour
- 1/2 tsp. baking soda
- 1 1/4 cup rolled oats
- 1/2 cup (150 g) dried wild blueberries
Preparation steps
- Preheat the oven to 350℉ (180℃). Line the baking sheet with parchment paper.
- In a bowl, add the butter, brown sugar, egg, and vanilla extract. Using an electric mixer, mix until light and creamy.
- Add flour and baking soda. Continue mixing on low speed until smooth.
- While stirring, add rolled oats and dried wild blueberries
- Divide batter into 12 equal cookies on prepared baking sheet.
- Bake for 12 to 15 minutes or until cookies are lightly browned. Do not overcook.
